When it comes to dinner time around here, I am all about quick and easy recipes! We are usually in between activities or homework for the little people, so I need things that I know we will all love, but don’t take slaving away all day to make! So a couple of months ago I shared our favorite enchilda recipe and got a lot of requests for more ideas! I finally had time to get a few together, so I thought it would be the perfect fit for today’s Favorite Finds!
CHICKEN ALFREDO :
This is for sure one my favorite go to quick recipes. Just thinking about this recipe makes my mouth water! It is one the whole family loves + devours so it is always on our rotation. It is far from healthy, but so dang delicious.
1/2 cube butter
4 + cloves chopped garlic
saute the two together with wooden spoon in frying pan
1/2 cup fresh grated parmesan cheese
1 cup whipping cream or half + half
add to butter/garlic mixture and heat on high until combined
Serve with chicken (or any other meat of your choice) over pasta of your choice! Don’t forget to lick up all that extra sauce…haha..you’re going to want to!
SAUCY CHICKEN :
This is a recipe we have been loving for years, and as you can see by the name is nothing professional or fancy. So what the name lacks it beyond makes up for in flavor. It is seriously so yummy and can be thrown together so quick, which is a must for my recipes!
Spray a 9 x 13 pan
Lay chicken breasts evenly throughout the pan
Cover chicken layer with shredded Monterey Jack Cheese
Pour 1-2 cans of Cream of Chicken Soup over the Cheese layer
Repeat another layer of shredded cheese.
Finish it off with a layer of crushed croutons covering the top.
Bake at 375 for 35-45 minutes
CHICKEN ENCHILADA CASSEROLE :
Our family loves mexican food so this is an easy favorite for us! I shared all of the details on this post, but had to make sure it was included in this roundup too because it is by far one of my favorite quick + easy recipes!
ORANGE JULIUS :
This is such a fun treat and screams summer time for our family! It is another one of the many recipes from my amazing Aunt Tina. Growing up, we couldn’t afford a lot of big crazy vacations, so we spent a lot of time vacationing to her house in Phoenix, which we all loved! She would always make the yummy alfredo I mentioned above for dinner, and this delicious orange julius for us to drink by the pool! I love that it brings back so many fun memories from my childhood, and that it is a part of so many for my little people too. Not to mention its delicious!
1 small can frozen orange juice
1 cup milk
1/4 cup or less of sugar
1 teaspoon vanilla
10-14 ice cubes
Blend all ingredients together until smooth + enjoy!
Life is busy and sometimes these quick + easy recipes are what save us when dinner rolls around! For me, just getting that time around the table with my people is what is really important! I’m always looking for yummy new recipes, so if you have any please share!!
