As soon as Fall weather hits the air, I always get the urge to start baking! Something about those cozy family tradition kind of recipes that just make the season complete. While they don’t necessarily fit into my healthier eating, these 3 recipes are yummy ones that either I or my assistant have been making for years and LOVE!

PUMPKIN CHOCOLATE CHIP COOKIES + MUFFINS
If you like quick + easy recipes, that only take 3 ingredients, this is the treat for you! When my assistant Michelle told me she had these on repeat from September-November and never got sick of them, I had to try them! You won’t regret it!
2 Spice Cake Mixes (just the cake mix…not the other ingredients the box calls for)
1 30 oz Can of Pumpkin
Chocolate Chips to your liking
Mix all ingredients until combined. “Dough” will be a little sticky, that is normal. Drop with cookie scoop onto tray. Bake for 10-12 minutes at 350. Makes about 24 cookies.
AND BONUS!! If you want to get away with eating these for breakfast, because they are so good, the exact same recipe makes even better MUFFINS! Just spray your muffin tin, fill 3/4 full (these don’t rise much so fill er up), and bake for 22-25 minutes. Your house will smell amazing and your stomach will be so happy you add this to your recipes.

1 pkg Frozen Rolls
2 Small Boxes Cook n Serve Vanilla Pudding
1 cup (2 sticks) Butter
2 Cups Brown Sugar
4 Tablespoons Milk
3 Teaspoons Cinnamon
Grease a 9 x 13 pan. Place 1/2 of the rolls in greased pan. Melt butter and combine with remaining ingredients to create your caramel sauce. Pour sauce over your frozen rolls, and then top with remaining rolls.
Let rise for 3 hours. Bake at 350 for 30 minutes. When done, flip over pan to display as shown with the gooey caramel sauce covering the top. Enjoy!

EASY 3 CAN TACO SOUP
This is one of those recipes that was made for moms on the go. It takes all the things you love about tacos, and warms it up into a cozy bowl for Fall, so you know it’s gonna be good. While the title calls it a “soup”, the consistency is more like a thicker dip you could eat with chips. If you want it more soupy, add the liquids from your cans too!
1 lb Ground Beef
15 oz can Black Beans
15 oz can Corn
8 oz can Tomato Sauce
1 packet Taco Seasoning
1 packet Ranch Dressing Mix
Cook Ground Beef on stove top until done + drain any excess grease. Spray Crock Pot +dump all ingredients in. I leave the liquid from the beans in but drain the corn before dumping. As I mentioned above, if you want it more soupy consistency, throw that liquid in too! Stir it all up. Heat in Crock pot on HIGH for 2 hours or LOW for 4 hours. Top with all your favorite taco fixings – sour cream, shredded cheese, lime, avocado, and eat with tortilla chips (I use this instead of a spoon) and ENJOY!
