White Chicken Chili

I don’t know about you, but when September comes, I just want to eat nice warm comfort food, which brings me to today’s recipe. This White Chicken Chili is one of our favorites during the fall and winter! Not only is it super delicious, but you can throw it together quickly, and it makes the best leftovers!

FAMILY FAVORITE WHITE CHICKEN CHILI

– INGREDIENTS – 

1 10-ounce can green enchilada sauce (mild)

2 15.5-ounce cans white Great Northern beans, drained + rinsed

1 pound boneless skinless chicken breasts

1 1/2 cups frozen corn or 1 can drained corn

2 cans (4 ounces) diced fire-roasted green chiles (mild), undrained

3/4 teaspoon paprika

1 tablespoon ground chili powder

1 tablespoon ground cumin

salt + pepper

2 cups chicken stock or chicken broth

1 package (8 ounces) cream cheese or cottage cheese for more protein

optional toppings: fresh cilantro, lime juice, cheese, sour cream, avocado

 

– INSTRUCTIONS – 

TIME SAVER:

Get a rotisserie chicken from the store. Pull out all the good chicken and throw everything into a pot. Simmer all ingredients for 20 to 30 minutes, and you’re done!!

Using an Instant Pot: 

Cook chicken breasts until done. Once it is done, shred the chicken, and dump the remaining ingredients on top of the chicke,n and change the setting to slow cook for 30 minutes. Leave on warm until you are ready. Top with whatever toppings you like and enjoy!

Using a Crock Pot:

Put chicken in the bottom of your crock pot and top with remaining ingredients except for the cream cheese. Cook on high for 4 hours or low for 6-8 hours. Remove chicken, shred, and add back to crockpot. Stir in room temperature cream cheese. Once it is melted, serve with your favorite toppings and enjoy!

These jeans are SO good! Finding the perfect jeans is so hard for me, but the fit is perfect, and the wash is absolutely darling. I found them at a couple of different stores, some on sale and lots of sizing options!

I always order a few of these waffle henleys every fall/winter because they are seriously my favorite! They come in a ton of colors and there are so many ways to layer and style them. Life Update

I figured it was time for another life update! I feel like the summer just flew by, and now we’re right back into the routine of school and sports. I always have mixed feelings when school starts. Part of me wants the kids home forever. I sometimes consider homeschooling, but it’s nice to have the separation in my day. I can work while the kids are gone and then completely focus on them when they get home!

OUR LIFE UPDATE

: SPORTS

This year, we aren’t running to football games for Hudson, and we don’t have a high school cheerleader to watch anymore. I thought I would miss it all, but honestly, it’s given us way more family time, which I will always fight for – so I’m loving it!! Both boys are in baseball, and both younger girls are in All-Star cheer, and ALLLL their practices are in full swing. This Spring is going to be CRAZY with baseball tournaments and cheer comps, so I’m just enjoying this time right now with only practices.

: HOME

I absolutely love being home. I feel like I’ve turned into a homebody over the last few years. And I’m not mad about it. I’m really excited to decorate for the holidays this year. Last year was such a whirlwind with moving and Hunter’s Senior year, so I’m excited to be home a bit more and  just enjoy all the fun holiday decor.

Joe is still absolutely loving his job 2.5 years later. We’re honestly still pinching ourselves that we’re back in our hometown surrounded by friends and family!

I recently had a switch/addition to my work team, and it has ended up being a good thing. Honestly, I’m just trying to get into a groove of the kids being back in school and a good workflow + home balance. I would love to get back into cooking and baking. So I think I’m finally going to take one day off a week. I’ve said this for a few years, but I’m really making it happen this year!

Hunter is on track to graduate from hair school in three months. We’re hoping she will be done by the very beginning of December. She also turns 19 in November, and we are so proud of her and what she’s accomplished and such a short amount of time. She’ll only be 19 and have her career ready to go.

Hudson‘s been invited to a PBR Super Sophomore event held at the University of Oregon for baseball, which is a pretty big deal! Him driving has also totally lightened my driving load. He is the best helper and drives the girls to all of their practices! I miss our one-on-one drives, but the girls have absolutely been loving the alone time with him.

Hayden’s 14th birthday is in a few weeks. All she can talk about is going to New York at Christmas time, and that has been on my bucket list as well for years! So maybe that’s something we’ll try to do this year or even next.

The babies are great. (And yes, I’m pretty sure we will always call them the babies even when they are 15 and 16!! Haha).

: TRAVEL PLANS

We are going to Seaside/30A in a month, and I can hardly wait! This has been on my vacation list for years, and we’re finally making it happen. We are going for a week and I’m so excited to soak up all the family time. If any of you have ever been, we would love any recommendations!

Our Sunday Routine

Sundays have become my little secret to keeping our week from feeling crazy. Now that school is back, I have a few simple things I like to do that make the biggest difference for our family. We get a little organizing done, sneak in some downtime, and enjoy a few laughs along the way. Sharing how we set ourselves up for a good week below!

OUR SUNDAY ROUTINE

 

: MEAL PLANNING + LUNCH PREP

Every Sunday we prepare the kids lunches for school. We bag up everything for the week… chips, sandwiches, pepperonis, crackers, etc., so the kids can just grab-and-go from the drawer each morning. This has honestly been the best hack for me as a mom and has made our mornings go much smoother. See another one of my favorite lunch hacks here.

Summer was nuts and dinner was never consistent, but I’m trying to be good about meal prepping so that we can have family dinner as much as possible. I’ve started cooking ground beef, chicken, and steak on Sundays so that I’m able to put together dinner meals in minutes throughout the week! This chicken tortilla casserole has been our favorite for years and especially the past few weeks! See more of our favorite recipes here.

: GROCERY SHOPPING

Grocery shopping is not my favorite activity. I signed up for Walmart delivery a few years ago, and it has been a game-changer for me and my family! I like to place my Walmart order on Saturday night so it shows up Sunday morning when everyone is home to help unload. It makes all the difference starting our week with a full fridge + pantry!

: CLEANING + LAUNDRY

Sunday is our reset day, where all dirty laundry gets brought to the laundry room, and I do a load each morning until I get caught up. Fridays are short school days for my kids, so we take that extra time to clean their rooms and bathrooms. Our rule is that they cannot hang out with friends until those are done being cleaned. It’s worked really well as an incentive and always gets done.

: WEEKLY PLANNING

Every Sunday night before family prayer, we have a quick weekly planning meeting. We take this time to go over everyone’s schedule for the week, coordinating rides and times. We make sure everyone’s activities are inputted into our Skylight calendar. The calendar has been amazing for keeping all of us on the same page!

: WIND-DOWN ROUTINE

Sundays are our days to slow down and just be together!! After church, we will take naps, watch movies, or play games together. Honestly, it’s one of my favorite parts of the week. I take work off on Sundays and that has been a blessing for my mind and having quality time with my people. Linking all our favorite games here!

Our Weekend in Moab

We just had the best weekend in Moab for my birthday! I told Joe the only thing I wanted for my birthday was time away with my family. Unfortunately, Hunter chose to miss out because she didn’t want to miss 2 1/2 days of her hair school hours. She has a graduation date in mind, and she’s trying to stick to it. So honestly, I was a little sad leading up to the trip. Just don’t love the changes that are starting to happen in our family as Hunter gets older. The thought of not having all of my kids there on our family trip was hitting me hard. It was a good experience, but a little bit of an adjustment at the same time. We left on Friday and we’re planning to come home Monday afternoon, but we literally had done everything on our bucket list, so we drove home late Sunday night so the big kids could go to school.

I couldn’t believe how many people from all over the country were there!! It was incredible that people drove thousands and thousands of miles to come see the beautiful sandstone arches. We started a game trying to find all the 50 states’ license plates. We ended up seeing every license plate, but six from the United States. We saw New York, Maine, and all of the East Coast states. It was mind-blowing!

MOAB DETAILS

: WHERE WE STAYED

We stayed at Elements by Marriott! It was modern and very clean. There was a pool area with lots of shade, a really cool hot tub, and an area for the kids to play cornhole. It also had a free breakfast every morning. We’ll be going back for sure!

: WHAT WE DID

We did a side-by-side tour with Moab Tour Company, and that was so fun! We did the level two tour in a six-seater side-by-side. They have all different types of vehicles, and you get to drive them yourself. It was so fun! A little nerve-racking at first, but ended up being my kids’ favorite thing.

Of course, we had to go to the Arches National Park! It was $30 to go through the park. I couldn’t believe how many different stops and sites there were, but we only ended up doing two. The Delicate Arch is the most famous in the world. This is the one that everyone goes to. The hike is a little bit more difficult, and Harper did struggle for the first 10 to 15 minutes just to get in the right mindset. But 1000% worth it. Took about two hours. And that was with us taking about 20 minutes at the arch to take pictures. Sandstone Arch literally takes five minutes to get to. We took off our shoes, and the kids walked through all the sand. There’s a little arch, and the kids played on the rocks and everything. Highly highly recommend this!

We also went river rafting with Navteq! This was so fun! We were actually on a raft all on our own, and the conditions were very mild. The guides were great too! We did the morning tour since the afternoon was going to be super hot.

: WHAT WE ATE

Everyone was so great and gave so many good recommendations on Instagram! We tried to hit up as many restaurants as we could. Here is the list that I compiled from everybody’s comments. 

Food trucks: There’s a spot in town where there are a ton of food trucks. The three or four that we ate at were very good. There’s also an area for the kids to play cornhole and tons of tables and shade.

Milt’s: SO GOOD! Excellent hamburgers and milkshakes! Probably our favorite place, as well as the food trucks.

Dough Bird: This place was closed, but we had heard great things about the donuts.

City Market: This was a great grocery store nearby. Joe went here for donuts one morning, and they were amazing!

Antica Forma: This was pasta and pizza, and we loved it!

Moab Diner: This was just an old-fashioned American diner. We weren’t dying over anything. But it was good and basic.

Moab Frozen Yogurt: The kids loved this place, and we ended up going two times!

Dewey’s Restaurant & Bar: Highly rated American food!

Moab Coffee Roasters: Cute coffee shop!

Gilberto’s: Highly rated Mexican food!

Zax: Amazing pizza that everyone recommended!

Moab was the perfect weekend getaway! Nothing too expensive or too crazy. And I loved the easy drive! We’ll be going back! Thanks again for all the birthday wishes!

It’s My Birthday- A Reflection on this Past Year

It’s my birthday tomorrow and it’s so crazy to believe that I’ll be 42!! Honestly, I never quite believed people when they said they still feel like they’re 22, but that’s exactly how I feel. But really, I still feel like I’m in high school!! Having our kids attend the same high school that Joe and I attended is honestly surreal. It takes me right back to all the memories we made there. And it’s even crazier to see our friends’ kids becoming friends with ours. It’s like a dream come true.

To be completely transparent, I feel like the last 2.5-3 years of my life have been completely insane. We’ve lived in four houses in that amount of time. We’ve bought and sold a few lots, started and stopped 2 home builds, adjusted jobs, our oldest turned 18 and graduated high school, and just a lot of other major big events!!  I truly feel like God has pushed me and made me grow so much in the last three years, and I’m honestly so grateful for it. I feel like my priorities have adjusted and aligned with what really matters, and every day I’m striving to just be a better version of myself. It’s crazy how your mindset changes in your 40s. I honestly don’t give two thoughts as to what other people think. I’m fine with embarrassing my kids with hugs and kisses in front of their friends and the online world, and if I could have my one wish, it would be to bottle them all up and keep them under one roof forever. And honestly, I am over things. Stuff gives me anxiety, and I have truly come to believe that less is more!! Material things don’t bring me joy.  Joe asked me what I wanted for my birthday, and I said my whole family. (Not sharing them with friends) haha. So he booked us a trip to Moab, and we leave today. I am so excited for a whole weekend with all my people doing what I love most…just being together.

FAVORITE MEMORY: 

I would have to say all my favorite memories from this past year include my kids. Just spending time together and being away from the everyday is honestly my favorite. But one particular memory is being in Hawaii for Hunter’s 18th birthday and going skydiving with her Joe!! I honestly never thought that was something I would ever do, but it just seemed to flow and work for that vacation! And I’m so glad I did it. 

FAVORITE TRIP:

Again, all of my favorite trips are with my kids, but this last year Joe and I went to Italy, and it was quite amazing! It was so fun to come home and show the kids all our pictures and talk about how much history is back there. I had never been to Europe before, so this was an amazing experience for both of us! FAVORITE AMAZON PURCHASE:

Again, it would be anything to do with my kids! So games or tubing/lake items, anything that has to do with them. But if we’re talking for myself, it would have to be my weighted vest. I have the 10lb vest, and I seriously put it on if I’m just cleaning up around the house or during workouts, too. It just adds a little extra oomph to my day and helps with core and leg strength! 

FAVORITE GIFT TO MYSELF:

As I get older, I enjoy investing in self-care and anything anti-aging, haha. My LED red light face mask has been my go-to skincare item for the past year. It’s helped my dark spots and has totally brightened my skin. I recently just bought this scalp massager from Amazon, and I am obsessed with it! It’s supposed to open your hair follicles to help with hair growth and keep your hair healthy! Definitely recommend!

What We Got Hudson For His 16th Birthday

Hudson is 16!!!! I can’t believe how fast the time has gone. I remember having him when we lived in Kentucky and it was just me and Joe against the world! It’s been the best week celebrating him! He got his drivers license this week and we’re surprising him with a car tonight! We bought him a used Toyota Tacoma. It definitely needs new paint and a couple repairs. But we think it will be a great project for him this fall since he’s not playing football! Today I wanted to share what else we got him for his birthday!

I can’t believe school is starting so soon! I swear summer break just started. Anyone else? I slowly started back-to-school shopping weeks ago thinking I had enough time and now I’m scrambling to make sure all my kids have everything they need! Today I wanted to share all the kids’ favorite clothes items for back to school. This year I only have 4 kids going back and it’s so bittersweet!

When it comes to school clothes shopping, I love picking out BASICS that they can wear year-round! I found these darling jeans for Harper and they come in a ton of cute washes. Love that she can style them with any top, sweater, shoe, etc. Hayden also loves picking out clothes from Abercrombie… linking her picks below!

Abercrombie is always my go-to for Houston! They have the best basics, we get this logo tee every year in multiple colors and he is able to style them year-round. Hudson always finds lots at Pac Sun- they have the best graphic tees and even pants! Linking their picks below!
